Last Tuesday was my blog baby’s 2nd birthday! I’m little late but I always wanted to celebrate my blog’s birthday. Well, I thank you everyone who visit this space and leave your lovely comments. Many thanks to silent readers too! I need all your support, love and motivation to keep going. Thank you again!

This time, I made Golden Vanilla Cupcakes to celebrate TWO birthdays. Two birthdays? Yes. :-) These vegan cupcakes came out unbelievably soft and beautiful.

HAPPY BIRTHDAY to Seven Spice!!!


Golden Vanilla Cupcakes | [makes 12 Cupcakes]


  • 1 C soy milk, rice milk any other kind
  • 1 tsp apple cider vinegar
  • 1 ¼ C all-purpose flour
  • 2 tbsp cornstarch
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ C non-hydrogenated margarine, softened, or ⅓ C canola oil
  • ¾ C granulated sugar
  • 2 tsp vanilla extract
  • ¼ tsp almond extract, caramel extract, or more vanilla extract


1. Preheat oven to 350°F/175°C and line muffin pan with cupcakes liners.

2. Whisk the soymilk and vinegar in a measuring cup and set aside for few minutes to get curdled.

3. If using margarine: Sift the flour, cornstarch, baking powder, baking soda and salt into a large bowl and mix.

4. In a separate bowl, use a handheld mixer at medium speed to cream the margarine and sugar for 2 minutes until light and fluffy, but don’t beat too much. Beat in vanilla and other extract, if using, then alternate beating in the soymilk mixture and dry ingredients, stopping to scrap the sides of bowl a few times.

5. If using oil: Beat together the soymilk mixture, oil, sugar, vanilla and other extracts, if using, in a large bowl. Sift in the flour, cornstarch, baking powder, baking soda and salt and mix until no large lump remains.

6. Fill cupcakes liners ⅔ of the way and bake for 20-22 minutes till done. Transfer  to a cooling rack and let cool completely before frosting.

I couldn’t help myself to eat it as soon as the cupcakes were out from the oven. They were pillow soft and fluffy to touch. It was my first experience without eggs and butter. I usually avoid frosting but this time I decorated a little to celebrate 2 birthdays. Feel free to use your creative idea for frosting or piping. I simply applied the frosting and sprinkled some 100’s n 1000’s.


Vegan Fluffy Buttercream Frosting | [makes about 2 cups]


  • ¼ C non-hydrogenated shortening
  • ¼ C non-hydrogenated margarine
  • 1.5 C + 4 tbsp confectioner’s sugar, sifted if clumpy
  • ½ tsp vanilla extract
  • 2 tbsp soy milk or soy creamer


Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 minutes. Add the vanilla and soymilk, beat for another 5 to 7 minutes until fluffy.

Your frosting is ready to spread or pipe on your cupcakes.

Half of them (cupcakes) are mine because tomorrow (15th April) it’s my birthday!! Woohoo!! Hurray!!! Happy Birthday to me!!! :D
