Diwali, the festival of lights is just around the corner. I have started to dust off my house, especially kitchen. I’m busy with pantry audit and it’s still ongoing. Lots of few things are gone to trash and now I’ll try really hard to keep my inventory up-to-date. I vowed myself that before I buy anything, have a look into fridge, freezer, pantry and everywhere. To keep your pantry and kitchen up-to-date is not easy task but it can be manageable for our peace of mind. Making a week or two week’s menu plan is even more torturous but it’s saves lots of energy and money in long-term. It’s another topic and can discuss with whole new post.

Before Diwali, we cleanse our house including every corner of our home sweet home in India. We all family members work together, even Dad try his best to contribute his part. My mom and MIL have already started their work. It’s huge and tiresome task but we enjoy together. Unlike in India, we usually don’t do here. But, Diwali is my most favourite festival since childhood so I do try my best to pull some kinda Diwali festival vibes here too by cleaning the house and kitchen. I also make some sweets and savouries for family, friends and colleagues.

This time, I made some coconut ladoo filled with some chocolate chips as per his demand. It’s pretty easy and simple recipe that required no cooking or baking. It can be ready in jiffy. If you’re coconut lovers then you should try it. Traditionally, coconut ladoo prepare using cooked sugar syrup. It’s slightly lengthy recipe and I tried it with using sweetened condensed milk. Just mix a can of condensed milk and some desiccated coconut. That’s it!

You can adjust the sweetness of ladoo as per your sugar sensitivity. Taste and adjust as per your sweetness tolerance level. Make sure you use unsweetened desiccated coconut. I bought a packet from Indian grocery store. Garnish with your favourite nuts and chocolate chips. My husband like his bite with chunky chocolate chips in between so I dabbed some inside the ladoos.

Easy & Quick Coconut Ladoo Recipe | Diwali Sweets | Gluten Free

{makes about 22-25 ladoos}

Ingredients:

  • 1 can (400 gm/14 oz) of sweetened condensed milk
  • about 4 cups [less or more] unsweetened desiccated coconut + few tablespoons more for coating
  • chocolate chips, or nuts of your choice

How to:

In a wide deep dish, have ready few tablespoons desiccated coconut for coating. Also, have ready some chocolate chips or nuts in another small bowl.

In another wide big bowl, put about 4 cups of desiccated coconut and condensed milk. Mix it with fork until all combined. Taste and adjust. Add more coconut if you like. The mixture should be easy to bind into rolls or ladoos. Take about a tablespoon of mixture and roll into ball, don’t forget to tuck some chocolate chips or nuts into balls if you wish to. While rolling the ball the mixture  could be sticky but don’t fret. It will be fine later. Coat the ball with desiccated coconut. Make ladoos from all mixture like this. Garnish with nuts or raisin. Chill for few minutes so they will firm up nicely.

Ready to gobble some, share some with your friends, family and colleagues :-) Store in a container and refrigerate for a week.

Congrats Sonia!!! And the laddos are so easy to make, so adorable looking, mouthwatering & pretty damn tempting!!!! Wanna grab them now!! and i had tried out the chocolate cake from Raks, my sis tried actually…Came out perfect..Easy to make & does not need.
